16-20 strips of short ribs
6 Tbsp. Garlic Pepper Sauce
1 hot pepper de-seed & chopped
2 Tbsp. fresh thyme chopped 1 Tbsp. fresh ginger grated
8 stalks green onions chopped
8-10 pimento seeds ground up
12 black peppercorns ground up
2 tsp. freshly ground nutmeg
2 tsp. powdered cinnamon
2 tsp. brown sugar
1/2 tsp. sea salt
1/4 cup malt or cane vinegar
Instructions:
Combine all ingredients into a paste. Rub generously over short ribs and marinade for an hour. Cook on grill for 7 minutes per side or to desired finish. Can glaze with honey towards the end of grilling for a milder heat. Serve immediately.
